Veggie cakes


Since becoming a vegetarian, I am always looking for a topper for stews or pasta dishes, or just a tasty side for oven-baked fries. These improvisable veggie cakes are perfect for that.

Ingredients

4-6 large carrots

broccoli

onion

garlic

other roastable veggies you have around

eggs

flour

Preparation

Roast the veggies at 400F chopped into smaller pieces until they are all tender. Process them in a food processor until small chunks are present only.

Add an egg per person, salt, and enough flour (or breadcrumbs) to bring it together into a thick batter. 

Pan fry or spread scoopfuls onto a parchment-lined baking sheet and bake until set at 400F. Cool on a cookie rack.
