This spicy bean sprout soup is delicious! Soup is very versatile and tasty. Typically, people want soup during winter and fall, but I think it’s a good option whenever you’re in the mood for something light, but still full of flavor. The prep and work is pretty easy too. 🙃😎💪🏾

1 tbsp sesame oil
4 cloves of garlic minced
8 cups of vegetable broth
1/2 of a medium onion chopped
1 tbsp soy sauce
2 tbsp korean red pepper flakes
2 tsp salt
1 tsp black pepper
1/4 cup of sriracha or Samyang spicy sauce
16 oz clean bean sprouts
4 green onions sliced
Sesame seeds and green onions to garnish

1- add sesame oil to a pot on medium heat
2- saute the garlic for about 1 minute
3- add the vegetable stock and onion and increase heat to a medium high
4- add the soy sauce, red pepper flakes, salt, black pepper, sriracha or Samyang, and the washed bean sprouts.
5- allow the pot to come to a boil and then decrease the heat to a medium low and allow to simmer for 30 minutes covered
6- add the sliced green onions and cook for another 5 minutes
7- serve topped with sesame seeds and more green onion

I served mine over rice.
