This cake was a fun one to make with the children. Easy to put together, and rewarding at the end. We all agreed: not as good as a proper cheesecake, but still tasty!
36 Oreo cookies
6 tbsp melted butter
18 oz cream cheese
2 cups heavy cream
0.5 cup icing sugar
2 tsp vanilla extract
In a food processor powders the oreos and drizzle in the melted butter.
Allow the cream cheese to come to room temperature, or microwave slightly. Beat with the vanilla and icing sugar until fluffy.
Clean the beater utensils and beat the heavy cream until it’s firm in a different bowl. Using a spatula combine the cream cheese and whipped cream together.
Press 2/3 of the cookie and butter mix into a 9-by-9 inch pan. Top with the cream cheese fluff.
Sprinkle on the remaining 1/3 of the Oreo crumbs and press in gently. Move into the refrigerator immediately and allow to cool for 5 hours or overnight. Serve!
