Tips to Make this Moist Streusel Cake

  • Having your eggs at room temperature to help prevent lumpy batter.
  • The icing is optional! If you rather not have icing in the morning, you are more than welcome to skip it.
  • If you like extra streusels, you can definitely double up on the cinnamon streusel ingredients.
  • To check if the cake is done, insert a toothpick in the center. If it comes out clean or has just a few crumbs, it is done.
  • To properly measure flour by the scoop, be sure to fluff the flour before spooning it into a measuring cup. This prevents the flour from being packed into a measuring cup. Level the top off inside of trying to pack it all in.
  • Be sure your oven is fully preheated before adding your cake to the oven.
  • Do not over mix the cake batter. Over mixing the batter can cause it to become dense.

Frequently Asked Questions

What is a coffee cake?

A coffee cake is a combination of moist cake bottom and a streusel topping without containing any coffee! It’s called a coffee cake because it’s meant to be served with coffee which is where the name comes from.

Why does the butter have to be cold and cubed?

Adding the butter into the streusel in cubes helps create a crumbly mixture instead of it turning into one large chunk of dough.

Can I make the cake ahead of time?

The coffee cake itself can be made ahead of time but you can also make the cinnamon streusel itself up to three days ahead of time and kept in an airtight container in the fridge until you make the cake batter.

How do I store leftover cinnamon streusel coffee cake?

Leftover coffee cake needs to be wrapped up tightly (or added to an airtight container) once it’s cooled to maintain it’s soft moist crumb. You can leave it at room temperature for up to 2 to 3 days and if you’d like for it to last longer, it’ll have to be stored in the fridge. Coffee cake can last for at least a week when stored in the fridge.

Can I freeze coffee cake?

You can definitely freeze coffee for later. Freeze the coffee cake whole or by the slice. Wrap up the cake or slices with plastic wrap before putting it in a freezer safe bag or container. Freeze the cinnamon streusel coffee cake for up to 3 months.
