Cinnamon roll breakfast cake


Another quick treat for the children: I didn’t have time to make cinnamon rolls, but wanted a quick, slightly sweet breakfast pastry for the morning. This was possible to whip up in under 10 minutes, and I could take care of chores while it baked.


2 cups flour

pinch of salt

1/3 cup sugar

3 tsp baking powder

1 cup plus 2 tbsp milk

1 large egg

3 tsp vanilla extract

6 tbsp melted butter

0.25 cup brown sugar

2 tsp cinnamon

0.5 cup icing sugar

0.25 tsp vanilla

melted butter to get frosting with the desired consistency 


Preheat oven to 350F.

Whisk the flour, salt, sugar, and baking powder.

Mix the egg, milk, vanilla. Mix the wet ingredients with the dry ingredients, then blend in the butter.

Spray a 9-by-9 inch baking pan with oil. Pour the batter into it.

Mix the brown sugar with the cinnamon. Sprinkle on top evenly and swirl into the top of the cake. Bake for about 20-30 minutes, until it is done at the center.

Meanwhile, prepare the frosting. Add the butter little by little. Spread this onto the warm cake. Serve!
