Our family just converted to a vegetarian diet: we are just doing a once-a-week eat down of meat stocks from the freezer, and not buying any more meat. Everyone in the family loves chicken and tuna salad, so this amazing chickpea salad is a filling, healthy, and delicious alternative.
2 cans chickpeas
Mash the chickpeas with a small minced red onion and mayo to taste. Season to your heart’s desire. We have tried multiple different seasoning combinations here, and all have been amazing.
Serve with flatbread and veggies!
