Ok…I’m not a vegetarian, but unless you really love meat (or you are really starving), this dish is better without the fried chicken. I know, because I tested a bite from the sandwich I prepared for my vegetarian daughter.
1 large sub roll (homemade is perfect)
2 chicken breast halves, sliced, breaded, and deep fried
2 large heirloom tomatoes
4-6 tbsp basil pesto
Spread the sub rolls with the pesto.
Place the fresh mozzarella onto the fried chicken pieces and broil to melt.
Place the chicken pieces onto the sub roll.
Top with tomatoes. Close the sandwich and serve!
