When blueberries are widely available, these blueberry bars are a perfect little treat for butter-lovers! Easy to prepare, not overly sweet, and very very buttery.
2/3 cup sugar
1 tsp baking powder
2.25 cups flour
0.25 tsp salt
zest of a lemon
0.75 cup cold butter
1tbsp lemon juice
2-3 cups blueberries
1 tbsp corn starch
2 tbsp sugar
Preheat oven to 375F. Grease a 9-by-9 inch baking shape.
Stir together dry ingredients, then cut in butter and add egg. Work together until crumbly dough forms. Add sour cream if the dough is too dry.
Pat half of the dough into the baking shape. Mix blueberries with lemon juice, sugar, and starch. Sprinkle onto the bottom layer. Add the top layer in dollops and pat down.
Bake in a preheated 375F oven for 35-45 minutes, until top is slightly browned. Cool in pan before serving.
